The Campari Spritz and its sweeter cousin, the Aperol Spritz, are my new summer happy hour favorites. I first encountered these cocktails in Venice, Italy where they appeared on nearly every restaurant table at apertivo time (the Italian version of happy hour). Now, when 5:30 rolls around on a nice summer night I declare – it’s spritz time! Keep reading to learn how to mix these simple refreshing summer cocktails. I’ve included the Campari spritz recipe and the Aperol spritz recipe!

Aperol and Campari are both bittersweet aperitifs. Aperol has a distinctive orange color while Campari has a deep red hue. Mixing either with prosecco and soda results in a light and refreshing pre-dinner beverage. I prefer Campari (I’m keen on bitter flavors) but I also get in the mood for Aperol. I keep my bar stocked with both of these liqueurs all summer.
I don’t know why the Campari spritz (or Aperol spritz) is not more popular in the states. After sipping spritzes every night as we traveled through Venice, Florence, Rome, and Sardinia, I vowed I would bring the tradition back home. Both the Campari spritz and Aperol spritz are served over ice – typically in a large wine glass with a straw (I like these). The ratio of liqueur to prosecco in these spritzes varies; otherwise, the process is the same. Mix the ingredients in a wine glass, add the ice, and garnish with an orange slice!

Ingredients
- 2 oz Campari or Aperol
- 2 oz prosecco (for Campari Spritz) or 3 oz prosecco (for Aperol Spritz)
- 1 oz club soda
- orange slices for garnish
- ice
Instructions
Combined the presecco, Campari (or Aperol), and club soda in a large wine glass and stir.
Add the orange slice and ice.
Serve with a straw.
