I’m about halfway through a nine-month break from alcohol and I have to admit, I’m struggling. The summer heat and social gatherings are making me crave an IPA, glass of rose, or cocktail like you wouldn’t believe. To break up the monotony of sparkling water, I’ve started experimenting with mocktails. I’m not a huge fan of sweet drinks so I do still tend to gravitate towards sparkling water based drinks. However, with a bit of fruit juice and simple syrup you can create something much more interesting. I like herbs too – infused in the simple syrup or muddled fresh in the glass. This sparkling lemon mint mocktail is one of my go-tos because it’s easy, light, and very refreshing. Tip: Make sure to put your mocktail in a nice cocktail glass. Dress it up with a straw and/or garnish to add to the experience.

Description
A perfect way to keep cool on a hot summer day.
Ingredients
- 1 tablespoon simple syrup
- Juice of 1 large lemon
- 12 ounces sparkling water (1 can)
- 1 large sprig of mint
- lots of crushed ice
Instructions
- Place 4 or 5 large mint leaves in a large wineglass (or cocktail glass of your choice) and muddle.
- Add the simple syrup and lemon juice.
- Pour in the sparkling water and stir with a spoon or straw.
- Top with lots of crushed ice.
Notes
I don’t like my mocktails that sweet. You can add more simple syrup or reduce the amount of sparking water if you like a sweeter cocktail.
