Dining Alfresco House Guacamole

Oh, how I love a fresh batch of homemade guacamole on a summer night!

We love guacamole in our house – it’s an alfresco dining favorite. Guacamole makes a perfect summer appetizer when paired with chips or veggies (and margaritas) and it’s also great served with tacos, fajitas, burritos, and so on. Guacamole Tips

You don’t really need a recipe for guacamole but you can consider this a good starting point to guide you on ingredient ratios. You can easily tweak the ingredient amounts to suit your preferences.

To get started, you will need avocado, lime, garlic, onion, salt, and jalapeno. I like fresh cilantro for garnish but this is not necessary. Some folks put tomato in their guac too but I am not a fan of that. Sometimes I toss in a little cumin, chili pepper, or coriander but I’m keeping this recipe basic. For the onion, I think white onion is slightly better than red (and more traditional) but I use red a lot too. I’m a huge fan of garlic but this guacamole is good without it too if you are not.

I think the secret to good guacamole is getting the texture right. First and foremost, you need avocados that are ripe – but not overly ripe. When you scoop the flesh out and put it in a bowl, don’t over-mash it. Leave some nice chunks to add texture. Next, you want to dice your onion, pepper, and garlic very fine. I don’t know about you but I do not like big chunks of onion in my guacamole. Lastly, when you combine your ingredients in a bowl, don’t over mix – remember we want the avocado to stay a bit chunky. Adjust the salt and lime if needed.

Our “House” guacamole recipe!


Ingredients

Scale
  • 3 large ripe avocados (see notes)
  • 2 limes
  • 2 garlic cloves, minced
  • ¼ to ⅓ cup red or white onion (not yellow), finely diced
  • 1 small jalapeno, finely diced
  • ¼ cup chopped cilantro for garnish 
  • ½ teaspoon salt, more to taste

Instructions

  • Scoop the flesh of your avocados into a serving bowl. Use a fork to mash the avocado to desired texture – try and leave some nice chunks.
  • Add the juice of one lime plus one-half of the second lime (sometimes I add the zest too).
  • Add the garlic, onion, pepper, cilantro, and salt.
  • Stir to combine. Add more salt or lime juice if desired.

Notes

  • I prefer largeish Hass avocados when making guacamole but you can easily use smaller ones too – you just need a few more. My husband keeps bringing home bags of pretty little ones. I substitute about 5-6 little avocados for 3 big ones. 
  • You can omit the garlic if you like.
