The Daisy de Santiago is a sophisticated daiquiriesqe cocktail that includes a somewhat unusual liqueur – yellow chartreuse. While it’s a great cocktail for any season, I particularly like them in the late summer/early fall time of year. This recipe comes from my sister who is a big-city bar tender and cocktail aficionado. She picked it up several years ago from a Mexican tiki bar where she used to work in Louisville, Kentucky. On Chartreuse
If you are unfamiliar with charturese, it’s a herbal liqueur made by french monks that dates back to the 1700s. Green chartreuse, the more well known of the two, is featured in the “Last Word” cocktail. It’s supposedly made from a mix of 130 different herbs, spices, and flowers and has a proof of 110. I love the stuff and sometimes sip on it over ice. Yellow chartruse is described as softer and smother than the green variety. According to this article, both have been growing quickly in popularity. If you are looking to broaden your cocktail repertoire, I recommend you stock your bar with a bottle of each.

Description
This cocktail is quick and easy to make!
Ingredients
- 2 oz aged rum
- ¾ oz lemon juice
- ¾ oz simple syrup
- ½ oz yellow chartreuse
- Ice
- Mint sprigs for garnish (optional)
Instructions
- Combine rum, lemon juice, simple syrup, and ice in cocktail shaker. Shake for 20 to 30 seconds, until shaker becomes frosty.
- Strain cocktail into glass and top with ½ oz of yellow chartreuse.
- Garnish with a mint sprig.
